This is a lipsmacking cocktail using Donkey Jack Gin! I recommend that you use fresh grapefruit for the juice rather than from a box.. makes all the difference!
The French Tart
Fresh, Citrus, Donkey Jack Gin cocktail
Yes, this cocktail is a little tart ( in the taste sense!) but there is a little sweetness coming through from the rosemary simple syrup which rounds it off nicely!
15 ml rosemary simple syrup
7.5 ml freshly squeezed lemon juice
4 drops floral bitters
30 ml St Germain Elderflower Liqueur
60 ml Donkey Jack gin
Half freshly squeezed pink grapefruit juice, strained
Add the grapefruit and lemon juices, St Germain, Donkey Jack gin, Rosemary simple syrup into a shaker; shake!
Strain into a chilled coupe.
Add a dash of floral bitters
Garnish with a slice of grapefruit and sprig of rosemary
And you are ready to slurp!
Oh! And you can make the Rosemary simple syrup really easily too! Just add 50g of refined sugar, a couple of sprigs of rosemary and 50ml of water to a pan and heat gently. Don't overheat, just make sure that the sugar dissolves. I left mine for about 5 minutes on a gentle heat. Then store in a bottle and add in fresh rosemary sprigs. Looks good, doesn't need to be kept in the fridge.... Perfect!
